They were the favorite cookies of the skipper, and the skiffman, neither of whom may have the time for a real breakfast, since they have to drive boats, right away, first thing in the morning; they have just about everything you'd eat for breakfast, except orange juice! All it is, is the recipe on the back of the butterscotch chips package! 1 cup Butter 3/4 cup Brown Sugar 2 Eggs 3/4 cup White Sugar 1 t. Vanilla 1 1/4 cup Flour 1 t. Baking Powder 1/4 t. salt 3 cups Oatmeal 1 cup Chocalate chips, broken candy bars, M&Ms, or something 1/2 cup chopped nuts Cream butter and the sugars together; then add vanilla and the two eggs; beat well. Mix in the flour, baking powder, and salt; mix well. Add oatmeal, nuts, and chocolate; again, mix well. Drop by spoonfuls onto cookie sheet; place in 375-degree oven; bake for 7-8 minutes, for chewy cookies, a little longer makes them crunchy. These will make regular tollhouse-type cookies; just leave out the oatmeal, and use 2 to 2 1/4 cups of flour, instead. I've added coconut, also; I've found that it does not substitute for oatmeal, one-to-one; add more than a cup, and you 'll have to add a tablespoon or so of milk or other liquid. If you need to use regular shortening instead of butter, add a couple of tablespoons of liquid, or the cookies will not flatten out or be chewy. |
